Romexis Docker Compose Refactor

This document has been merged into the normal README files.

Use:

The important Compose workflow is:

DATABASE_BACKEND=mssql
COMPOSE_PATH_SEPARATOR=:
COMPOSE_FILE=docker-compose.yml:docker-compose.${DATABASE_BACKEND}.yml

or:

DATABASE_BACKEND=firebird
COMPOSE_PATH_SEPARATOR=:
COMPOSE_FILE=docker-compose.yml:docker-compose.${DATABASE_BACKEND}.yml

Then start the stack with:

docker compose up -d

Local builds are handled through:

./scripts/build-local.sh all

or:

.\scripts\build-local.ps1 -Targets all
