fix: use lowercase Planmeca namespace in repository references
Changed all remaining `Planmeca` repository and Docker image references to lowercase `planmeca`.
This fixes Docker/registry image names, because Docker repository names must be lowercase, and prevents CI builds from failing with invalid tag errors.
chore: migrate repository references to Planmeca organization
Moved the Gitea repository from patrick/romexis-server-docker to Planmeca/romexis-server-docker.
Updated Dockerfiles, README files, wiki/documentation pages, build references, image references, and other occurrences of the previous repository path so the project consistently points to the new Planmeca repository location.
